Delicious, healthy recipe of the month

We are nearly at the end of #Veganuary January, and if you’re looking for help on how to keep that healthy eating regime going for longer and want to incorporate more vegetarian meals into your weekly repertoire this delicious Aubergine and Green Bean Curry is sure to be a winner:

Aubergine and Green Bean Curry (serves 4 – 6)

INGREDIENTS:

1 aubergine cut into small cubes
2 medium potatoes cut into thin slices
2 green chillies chopped
1 green pepper cut in thin slices
1 finely chopped tomato
small bunch of green beans cut into short lengths
1 tbsp. ground coriander and cumin mix
1 pack of Honestly co Curry Masala blend
1 tbsp. of cumin seeds
2 – 4 tbsps. of olive oil

METHOD:

  1. Add cumin seeds chopped tomato and potato slices to olive oil and fry
  2. Add green chill, green beans, aubergine and 1 pack of Honestly co Curry Masala blend and stir
  3. Keep adding splashes of water and stirring so the mixture doesn’t stick
  4. Steam for 10 minutes
  5. Once the vegetables are cooked garnish with 1 tbsp of ground coriander and cumin

You now have a warming, filling, healthy and delicious vegetarian dish ready  in less than  20 minutes!

Best served with Naan or Chapatti.
